It's Friday, Friday, Friday...

I tried to make chicken salad today.  It seems to have tasted ok, although it sure didn't look very appetizing.  Slices of mango, 10 pretzel chips and whole wheat squares to make it a sandwich and this was ready for Hubby to take.  Boy, I was surprised at how much mayo is required to make the chicken "moist"!

Thankful Thursday

So Hubby got lots of left overs today.  It is a turkey sandwich on Weight Watchers whole wheat bread, and although you can't see them there are slices of tomato and lettuce on the sandwich.  The dill pickle was looking a little old but still smelled ok.  There was a little potato salad left from the weekend and then some celery with hummas.  Boy do I need to get to the grocery store!

Tasty Tuesday

MAC decided that because I packed watermelon in Hubby's bento that she wanted some too.  I gave her watermelon and the leftover hamburger sub.  So it's only taken me this long to figure out that if can put a juice pack in instead of trying to force lots of food on to her.  (The pockey's were just for fun and to share.)

Hubby got a turkey sandwich on potato bread with lettuce, tomato and a side of mustard.  The watermelon and fresh cherries were great to add a little color too.

Tasty Thursdays

It is the last day of the lunch week for Hubby.  Tomorrow is his flex day so I decided to take advantage of the fresh fruit that has been showing up at the grocery store and give him lots of it!  He got three pieces of white fish sashimi, and 3 pieces of spicy jalapeno roll so he would have some protein.  I then added white peach, cherries and watermelon.
Monday is  a holiday for all of us so I will have new pictures/lunches on Tuesday!

Wacky Wednesday

So this week is wacky because I did not make Hubby, MAC or myself a lunch today.  Still not feeling so well, so I skipped band and was asleep by 8:30 last night.  I promise there will be a new lunch tomorrow!

Tuesday, it happens every week!

Still not feeling all that well, so I was grateful to have one last left over turkey sandwich from Panera.  I jazzed it up a little with lettuce and some Munster cheese.  Hubby loved the fresh cherries so he got another couple of handfuls today, as well as the ever present dill pickle.  He also got a sliced orange and a cheddar string cheese for breakfast.

Monday, Monday...

Not wanting any leftovers to go to waste I gave Hubby one of the left over Ham and Cheese sandwiches from Panera.  He also got some fresh cherries and a dill pickle.  I was thankful for the leftovers since I was really feeling ill.
The original cheese was a little hard after having gotten warm in the car so I took it off and added slices of pepper jack and some lettuce.

Bonus Lunches

Saturday was SERC's annual open house.  For the first time ever we decided to try two days in a row.  Lunches could be purchased from Panera for $10 or you could bring your own.  I felt that $40 for lunch was just a little too much so made lunch for myself, Hubby and K. Mac.  Above you can see the one I packed for K.  She got 1/2 a shrimp spring roll with the sauce, fresh strawberries, veggie chips and 2 different types of sushi (veggie and tuna).
Hubby got a little more spice.  He had 3 slices of sashimi  and 4 tuna rolls with spicy mayo over the top.  (Yes I know the mayo looks slathered but he dropped the container upside-down so it's his own fault!)  He also got 4 slices of Wegman's new jalapeno volcano roll.  With the strawberries and spring roll he also received a cheddar string cheese as a snack.

Sunday was supposed to be rainy but humid and the weathermen did not disappoint.  K. Mac. got a caprese salad (using the some of the left over tomatoes from Panera), herbed mozzerella, fresh basil and a splash of balsamic vinegar.  She like the veggie chips enough that I gave her more for a snack and a hard boiled egg for some protein.
I got chopped caprese salad using a weight watchers string cheese (instead of the herbed mozzarella) and 4 slices of veggie sushi.  The strawberries were easy to eat on the run and the veggie chips gave me the "crunch" that I like.
Over the course of the two days I walked over 23,000 steps!

TGIF!

Today was a little different.  I'm beginning to feel under the weather so went with anything I could find in the 'fridge.  Hubby got spicy salami and jalapeno cheese slices as well as a hard boiled egg on a bed of lettuce.  Yes there are a couple of slices of celery interspersed in those containers.  He also got the last of the baby tomato caprese salad and some fresh cherries.  Nothing spectacular, but definitely good food none the less.

Tasty Thursday

I call this Spicy Caprese.  It is heirloom tomatoes, fresh basil and herbed fresh mozzarella with a little spicy salami, and a hint of balsamic vinegar.  I got some fresh cut watermelon to put in the one cup and just a little whole wheat sour dough for the open container.  Hubby also got half a grapefruit for a snack.
MAC decided that with watermelon in the house she did want a lunch, but of course "Not a lot".  She got a strawberry fruit leather, jalapeno pretzel crisps and the watermelon.

It's Hump Day!

Yesterday was very, Very, VERY long.  By the time I got home after leaving the house at 6:40am the clock said it was 10:05pm. 
Hubby got more smoked salmon.  It is on a bed of lettuce with wine cheese and scallions.  In the back are a few organic corn chips for "crunch" and then for health he gets celery and peanut butter.  Not too exciting but filling and nutritious.

Typical Tuesday

What do you do when your spouse is depressed?  Get him his favorite food of course!  Last night was a binge on Papa John's pizza for the family.  He was able to choose what toppings he wanted (Pepperoni, jalapenos, and spicy sausage) and the whole pizza was his. 
There were left overs so I decided to give it to him for lunch.  He also got caprese salad and Amish grown celery.  I decided to go with some crunchy peanut butter for celery dipping instead of dressing today as a change.

Monday again

On Friday I had a wonderful dish at Panera from their Hidden Menu, "Power Steak  Lettuce Wraps".  I tried to give Hubby a taste of it here.  I gave him a few slices of whole wheat bread as well as the roast, onion, and lettuce leaves.  A few carrots, mustard, and the Jalapeno Pretzel crisps rounded out the lunch.  He says that he has been enjoying these lunches and that he has been enjoying the fresh fruits and veggies.

Thoughtful Thursday

Hubby was the only one to give me his lunchbox so he was the only one to get a lunch today.  I started making things at 9 last night so I wanted it to be easy.  He got the sourdough bread cut into bitesize pieces, 2 slices of muenster cheese, some red onions and about 2 1/2 oz of smoked salmon.  This salmon looked a lot better than the sushi salmon from 2 weeks ago doesn't it?  He got 3/4 of a half of the amish grapefruit.

MAC is sick and won't be going to school tomorrow, it is Hubby's flex day so he won't need a lunch and some co-workers and I will be eating out so nothing to take pictures of for tomorrow.  Have a great weekend and we'll start this all over on Monday!

Welcome Wednesday

It was a green lunch for Hubby today.  He got a whole wheat sour dough, jalapeno cheese, and Cajan turkey wraps to make a sandwich.  There is a little mustard in the back and some jalapeno pretzel crisps for the crunch.  MAC surprisingly didn't eat all her strawberries so he get's to finish the container.

MAC on the other hand is still only asking for snacks so she got veggie chips and jalapeno pretzel crisps.  (The veggie chips are gluten free, and the crisps have a nice kick to them.)

What A Week!

I didn't make it to the grocery store on Sunday as I usually do, so had to go last night after dinner.  I was thinking about what I should make for lunches this week and realized that other than Monday, I wasn't going to be home before 8 any of the rest of the days this week.
Hubby got a salad with sushi tuna as his main course.  Carrots with hummas, strawberries, a small salami flower, blue cheese dressing and a mozzarella ball finished the box.  I found some new dressing containers, and I think they hold just a little more than the squares.  Lot's of color today!
MAC asked for a smaller amount again so she got half the amount of strawberries, a mozzarella ball and some jalapeno pretzel crisps.  It's getting harder and harder to find good for her food that she likes enough to eat.  I keep trying to explain that one can not live on muffins and hamburgers alone!

Monday, Monday

Hubby wanted a "real sandwich" today.  He got two slices of organic sourdough bread with a slice of Munster between them.  There are a few slices of tomato, a little mustard for spreading and two rolls of roast beast.  I picked up two grapefruits at the Amish market on Friday so he has half, and then some veggie chips.  It has been very gratifying to have an empty lunchbox come home every day. 

MAC on the other hand is still just wanting snacks.  She got really fresh strawberries (also from the Amish market), corn chips, salsa, baby carrots and some hummas.  We discussed how the carrots could also be dipped in the salsa giving them a little spicy taste to go with the crunch.

Friday Fun


Hubby stayed home sick on Thursday so he just took Thursday's lunch for Friday.  MAC has been bringing more home than she or her friends have eaten so she only wanted a snack pack of gold fish today.

I joined Weight Watchers on Tuesday and have been very conscious of what I'm eating these days. 
This is my lunch for Friday, two portabello mushroom caps, diced peppers, scallions, and salsa to make mushroom pizzas.  The plastic wrapped items are mozzarella balls, because what is a pizza without cheese?  We have a toaster oven at work so I'll toss it all in there for 5 minutes and voila, lunch!

Not Feeling It

MAC had a late group meeting so we didn't get home until well after 8pm.  She didn't want anything, so I made Hubby's in my bento.  (This meant that I didn't have to wash and dry any dishes).  I wasn't feeling overly creative so I just went for lots of color.  The veggies are baby peppers, green beans, carrots, cucumbers, yellow peppers and hummas.  There are some corn chips with salsa and then his protein was the last of the hard spicy salami and wine cheese.

Mash-up


Once again it was band night so I was making lunches rather late.  They both ended up as a hodge podge of items. 

Hubby got half a blood orange and a few mozzarella balls to go with his Bar-B-Q chips.  The mini baguette was interspersed with wine cheese slices and the spicy hard salami.  He did get some healthy carrots and green beans with hummas. 
MAC said that I have been packing her too much food so we went back to using her Edgar Allen Poe lunchbox and she got 2 rice cakes, a mozzarella ball, 3 chips, salami, a mini red pepper and a few pieces of mini baguette.
