Tough Thursday

No pictures of lunches today because Hubby forgot his lunch yesterday morning and also left it in the 'fridge this morning when he left for work.  I decided to take half of it for my lunch today but will leave you with a bonus breakfast picture of our breakfast berry parfait (any berries that we have over fat free vanilla greek yogurt with a light drizzle of the dark chocolate balsamic vinaigrette).

Wonderful Wednesday

Can't you just tell when I have had too long a day and don't feel like packing lunches?  Today Hubby got mini-baguette with a weight watchers string cheese a few tomato's, mustard, and the last of the hard salami.  The carrots added crunch as usual and the mixed berries in back are covered with a sugar free strawberry glaze that Wegmans was tasting the last time I went.
It was a long day of work, after work meeting, and a concert at the Ginger Cove Retirement home.

Tasteful Tuesday

I used that wonderful cherry pitter again.  This time though I drizzled the Dark Chocolate Balsamic Vinegar over the open cherries hoping that they would have a chance to soak in the flavor.  Hubby has missed hummas so in the little blue container is jalapeno hummas and a few baby carrots for crunch.  The cherry tomatos have regular balsamic vinegar sprayed on with a pinch of the ghost pepper salt to add flavor.  Because it is Hubby's lunch I also added a little Wegman's hard salami and the Drunken Goat cheese.

Mechanical Monday

I have a new kitchen toy!  Last weekend when I made him lunch Hubby had asked for me to take the pit out of his cherries.  That was messy!  (And to top it off I hate cherries so I didn't even get the fun of enjoying the juice left on my fingers!)  While we were in a kitchen store yesterday I found a cherry pitter.  It really is an ingenious device...one hand movement and the pit comes out the bottom and leaves a nice little hole in the middle of the cherry. 
Today Hubby received a caprese salad without the mozzarella, cherries (pitted of course), a new version of the kale salad that is not as sweet and has spring onions.  The stuff in the little container is the dark chocolate balsamic that I suggested he pour over the cherries and let them sit for a little allowing them to soak up the vinegar, and then his protein:  hard salami and an ounce of blue cheese.

Tasty Thursday

We found a wonderful store called Cleo's in the Annapolis Towne Center, they sell exotic oils and vinegars.  We decided to try a sample pack.
Lunch today was a chicken salad of diced chicken breast, a spicy macadamia nut oil, spring onions, and a few hot peppers.  This could be spooned onto the bread slices and the kale salad made it green.  Desert was mangos and cherries with a dark chocolate balsamic vinegar to drizzle over it.  Hubby said it was delicious!
Tomorrow is his flex day so no new lunches 'till next Monday.  Have a nice weekend!

Wednesday, June 19.

Hubby asked me why I go to the grocery store so much more now...this is why!  I used the last of the fresh cherry tomatoes, and the last little bit of mozzarella to make the salad last night.  I do still have onions but need more oil and vinegar for the dressing.  The whole pretzel crisp on top was the last whole one, everything beneath it are pieces.  There are only a handful of cherries left after this group and the last of the drunken goat cheese is in the above purple container.  The meat is left over spicy sausage from Sunday's grilling but we are definitely getting low on mustard as you can see.  Wegman's and I are becoming fast friends!

Typical Tuesday

As you can see there was a theme for todays lunch, RED!
There were more fresh cherries, and I know you can hardly see it but there are pieces of red pepper on the Kale salad.  Mangos and strawberries are his fruit salad and then cherry tomatoes with mozzarella cheese balls as protein.
I have been trying to find a way to not have to cook or bake because it has been so warm and we haven't turned on our air conditioning yet...

Munchie Monday...

You know there is something strange about you when your favorite cheese is called "Drunken Goat"!  Of course I love it too so we must go well together.
Hubby got 2 oz of this cheese for lunch along with fresh cherries, a few slices of bacon and sliced mango.
He was really excited to be getting mango again.  I had stopped buying them because I was tired of the whole thing getting over ripe and going bad, but Wegman's to the rescue:  they have it already sliced and ready to eat!
He asked me why every time we leave the house I say, "hey, can we stop by the grocery store?" and I told him it's because the fresh stuff disappears so much faster!

Thursday

Here we are almost at the end of the week again and I am down to the crumbs in most of my bags.  Hubby got slices of hard salami on a bed of lettuce, the last of the jalapeno pretzel crisps, some watermelon slices and the last of the kale salad.
I am planning on taking off tomorrow since it is the last day of school for MAC.  I will be back Monday with more meals!  Have a good weekend.

Wednesday Feast...

Today Hubby got a spicy scallop sushi roll from Wegmans to go with the sliced mango, jalapeno pretzel crisps and kale salad.  Both of us have found that we really like kale like this and I have now gone through 2 large bags of it.

Monday Munchies


Since, once again, I didn't make it to the grocery store when I thought I was going to Hubby got lots of leftovers.  It started with a turkey sandwich on whole wheat with lettuce tomato and onion with jalapeno's, dill pickles, and mustard to add later.  There were carrots and some jalapeno pretzel crisps.

Who Knows?


I have no idea why Hubby doesn't seem to eat his lunch at least once a week but he did not eat on Tuesday so there was no new lunch on Wednesday.
I made 5 oz hamburgers on Sunday that Hubby grilled.  He got one of the last ones on a potato roll with lettuce, tomato, onion and a slice of Weight Watchers jalapeno cheese.  The little containers have mustard and ketchup to put on the burger and the third one is Italian dressing for the mixed peppers.  I thought this made a very pretty colorful lunch.
Lucky Hubby his flex day is tomorrow so no more lunches this week.  I will be back on Monday.  Have a wonderful weekend.

Something fishy going on here...

We are really low on things in the 'fridge these days so Hubby got a whole lot of leftovers.  A little celery, a little cheddar cheese, some kale salad, and a bed of lettuce to hold the last of the smoked salmon.  I just love string cheese!  It makes a great snack and can be eaten in the car if you want to.

Manic Monday

We grilled for the first time in over a year last night!  This was some of the best steak I have ever tasted.  It had marinaded overnight and then I cut up baby potatos and seasoned with dried herbs.  They were delicious!!  The slices of mango were nice and juicy he said and the string cheese and kale salad.
MAC decided that if Hubby got mango she had to have some too.  She got watermelon, mango and the banana.  She does love her fruits!
